Salad
1 Lg head fresh Red-Leaf Lettuce, inspect closely and wash well.
4-6 Green Onions, sliced small
6-8 Radishes, sliced thin
In medium size bowl: Tear lettuce by hand into 2" pieces. Add sliced Green Onions and radishes, and toss well. Set aside until ready to add dressing and serve.
Wilted Lettuce Dressing
5-6 slices Bacon, Thick Sliced
2 tbsp Red Wine Vinegar
1 tbsp Lemon Juice
1 tsp Sugar
½ tsp Black Pepper
In skillet, fry bacon on medium heat until done. Reserve hot grease, but transfer bacon to a paper towel and blot excess grease. When bacon is cool to the touch, crumble into small pieces. Set aside.
Reheat grease in skillet and add all other ingredients, stirring continuously until sugar is completely dissolved. Bring mixture to a boil. Reduce heat to simmer, and keep warm until ready to serve salad. Pour warm dressing over lettuce, onion and radishes, and toss well.
This salad goes well with a big pot of brown beans and ham.
