Orange Crepés

1¼ cups All Purpose Flour
1 pinch Table Salt
2 lg Egg whites
⅔ cup Orange Juice
1 tsp Granulated Sugar

Sift flour and salt into medium bowl. Make well in center of flour mixture and add egg, O.J. , then sugar, if desired. Beat on high until smooth and bubbly. In hot 6”, 8” or 10” skillet, add just enough batter to cover the entire bottom with a thin coat. Cook on medium heat until crepé is golden brown, then turn and brown the other side. Place between sheets of paper towels until ready to use. Fill with fruit mixture or meat/veggie mixture; roll up. Serve fruit crepes with powdered sugar and mint, or your favorite cream sauce over a vegetable or meat filling.
