1 large can Ortega Green Chilies
4 Extra Large Eggs
⅓ cup Milk
½ cup Flour
½ tsp Baking Powder
1 small can sliced Olives
2 cups total: 50% Cheddar Cheese and 50% Monterey Jack Cheese (grated and mixed well)
Preheat oven to 375º, and grease a 9"x13" baking dish. Set aside. Slice chilies down one side from just under stem to bottom tip. Remove stem and seeds. Line bottom of greased 13" x 9" baking dish with open, flat chilies. Cover chilies with one-half of the grated cheeses. Repeat once. Combine eggs, milk, flour, and baking powder, and whip with electric mixer on high setting, until thick and frothy. Pour mixture over top of cheese and sprinkle sliced olives over the top of mixture as evenly as possible. Serve with rice and refried beans.
Bake for 30 minutes at 375º.
